Professional individual, preferably with a minimum of 15 years culinary experience with two of those being in a Sous Chef capacity. Sound knowledge of fine international cuisine, purchasing, effective cost control, menu planning, health and safety standards and personnel management are a must. Must be able to prepare breakfast, lunch and dinner meals to a high standard of taste and presentation. Excellent interpersonal and communication skills are also essential.
